I’ve posted a black bean burger recipe before and that recipe is delicious, despite the fact that the photo I posted there is atrocious. But, today I wanted to make black bean burgers and I didn’t have all those ingredients.
This recipe is much simpler
This recipe does not have bread crumbs and is therefore gluten free
This recipe does not have eggs and hence is vegan
This recipe is still really tasty
And a little spicy too
Spiced Up Black Bean Burgers
Makes 3 burgers
1/4 of a medium red onion
2-3 gloves garlic
1/2 a small jalapeno pepper (save the other half for a garnish!)
1 (15oz) can black beans
1/2 cup rolled oats
Juice of half a lime
1/4-1/2 a tsp salt (I used a mix of kosher and seasoned salt)
1 tsp dried cilantro
A few drops of my latest obsession
1 tablespoon olive oil
Place the onion, garlic, and jalapeno, in the food processor and pulse until finely chopped. Add beans and oats and blend until combined. Transfer mixture into a boil and add remaining ingredients (except the oil). Heat the oil in a saute pan on medium heat. Form the bean mixture into 3 patties and saute until heated through, 5 or so minutes on each side. Serve!
*for a chunkier texture only put 1/2-2/3 of the beans in the food process and stir in the remaining beans after you transfer the mixture into a bowl.
These would be delicious topped with guacamole and caramelized onions. Then again, what isn’t delicious topped with guac and caramelized onions?
